Mt. Ali Oolong from the Ali Shan area is one of Taiwan's best and most well-known oolongs.

The Alishan (Ali Shan) mountain range is Taiwan's largest mountain range, with 18 peaks. Mountain Ali, where this tea is grown, is a high mountain location. Tea is grown at elevations of 500-1500 meters, which, along with the tea's particular climate, results in a highly smooth and sweet flavor.

Tea bushes thrive in the pure environment of high-mountain estates. Tea is harvested twice a year, in the spring and the autumn. This tea's starting material is a newly harvested rich bud with two young leaves. After harvesting the bud and leaves, mash them together to make a juice, then start the fermentation process. The air oxidizes the tea leaves. After that, the fermented tea is fried for a while in boilers. Every plantation keeps the combination of roasting time and temperature in the utmost secret. The high content of tannins and catechines can be preserved using modern tea leaf rolling and heat treatment techniques.
